"Cover of the Rolling Stone": Dr. Hook. Really. Long-time laughter first time I heard that, uh, "lead guitar break" by George Cummings.

"Elvis is Everywhere": Mojo Nixon

Almost any Spike Jones tune, particularly "Dance of the Hours" and some of the stuff Doodles Weaver was on.

Jones was sorta like the Frank Zappa of his era--hyper-talented but chose to do off-the-wall stuff, although a generation later, Zappa pretty much didn't do parodies like Jones....but (the "Hey Joe"-based) "Flower Punk" from We're Only In It For The Money comes to mind, and that one was indeed funny.

Ditto when the Mothers of Invention broke into the Albert Hall pipe organ and played "Louie Louie" on it (found on the Uncle Meat album)

If videos count, add Devo's cover of "Satisfaction"

If movies count, add "Johnny B. Goode" by, er, Michael J. Fox sitting in w/ Marvin Berry & the Starlighters.

If TV shows count, add Barth Gimble's "Gettysburg Express" from Fernwood 2 Night. Nice archtop Barth was playing, however.

If TV commercials count, add Limpopo's street musician promotion of Kit Kat candy bars.

Most of the antique and/or semi-obscure stuff listed here can be found (at least, in audio) on youtube, etc.
