How do you play an open G chord?

Unless I'm reading you wrong, it's just the nature of having straight frets on the fretboard. Your chords ring out in tune only if you use a true temperament fretted guitar. That fretting also assuming you will tune it to one tuning only. Changing the tuning on a true temperament guitar would in theory required refretting again for that tuning, which is silly
