How do you adjust the action on a Wilkinson?

I pulled out my Mirage I a little bit ago. I haven't been playing it that much since I got a few other guitars. Anyway, I noticed that I had the action set really high on this guitar. I'm sitting here looking at the Wilkinson and I'm thinking, do I have to adjust each individual string for height? If so, that's a pretty shitty design.

Short answer: Yes.

You can change overall height by adjusting the spring tension to tilt the bridge further forward (higher action) or further back (lower action). But that also changes the angle to bar sits at. Best method is to set the spring tension to allow the desired bar angle and up-pull amount, then adjust each string to desired action height.

All traditional Strat bridges adjust in a similar manner, just the nature of the beast.
