There's a bunch of ways to skin this cat, but I'd recommend the Digidesign Eleven Rack. It comes bundled with ProTools AND you get the nifty rack/amp simulator.

There is also logic express. what version of Garageband are you using?

Cakewalk makes several excellent products. I use Guitar Tracks Pro. Their Sonar lineup is even more powerful. They have to run under boot camp since they aren't Mac OS compatible. I run on an old windows machine so I have no knowledge on how well it runs under boot camp.

Audacity is supposed to be a very good DAW and it is free. They have a Mac OS version.

Logic 9 of course. Full of great sounding plug ins and the new amp pharm. I'm still running LP8 just because I'm too lazy to upgrade :P Any DAW product has issues, Apple isn't immune but my little system is very stable and the limiting factor always seems to be...me.

I'm all about Pro Tools here, but I would recommend Logic as all your existing Audio Unit plugins should work fine. I have a couple of friends that use it and they really dig it. It also has built in delay compensation (important down the line) and should work with nearly any interface.
