Since no one else has said it, stop with the epoxy.  Holes in epoxy should be filled with epoxy.  Holes in wood should be filled with wood.

I've bought 3 guitars from them over the last 4 years!  Don't know why I didn't recognize the name until I went to the website and immediately recognized the wall layout.

I have tried to 'drill out' screws and it is practically impossible. One thing I have heard of (for removing broken screws from pickup rings) is to heat the broken off screw with the end of a soldering iron - which I guess will expand the screw and and maybe burn the surrounding wood to make it easier to 'unscrew' (once you have some way of doing that - pliers or groove cut in top). Well.

Now that I know what I have done wrong, I'm simultaneously pretty sure I can do a few of the less difficult necks and terrified that there's still stuff I don't know that will screw it all up.

So let me ask: is it insanity to consider drilling holes in a neck without a drill press?

Before I had a drill press, I clamped the body and the neck together "using the 2 E strings as a straight edge" and used the holes of the body as a "drill guide"... just make sure you mark the drill bit "depth" with tape so you don't drill through the fretboard

That's what I was thinking I could do. Now I'm a little scared/worried, but I think I gotta try it.

You can do it... it's really not that difficult... TAKE YOUR TIME... check the depth of your screw against the body, neck and neck plate then mark your bit... drill 1 hole, then check it..  do another
