Hard to say. 
Both great, obviously, but there's nothing like having something built exactly the way you want it, and having the guy that is making it communicate with you to make sure everything is the way you want it.

I preferred the ebony fingerboard on the Ultimate to the rosewood, so it definitely felt more supple in my hands (which are also soft and tender, by the way).

Even if they were equal; build-wise, sound-wise, etc, I would still opt for the Ultimate 10 times out of 10 because it was mine.
There were 99 other Korina Standards almost exactly like that one.

Of course I sold them both, so what do I know?

I agree with your take on having something built exactly how you want it. I’ve built a few parts casters and though they have quirks they suit me perfectly.

I’ve played a lot of both.  The Korina Standards are awesome…BUT I’ve played 5-6 that were ridiculously heavy.

There are absolutely no heavy Shishkov Ultimates.
