Got pots and pans, need kitchen knives.

I need a knive set that goes in the block thingy to make the world a better place. Doesn't have to be top shelf, but an intermediate level set would do nicely.

I've searched Victorinox, Henckels, Wu$thof, etc, and need some opinions/experiences.

Whaddaya got?

I'm not a fan of the intermediate level "One Guy" Henkels sets. Honestly, a FarberWare set is a better value and a better set straight up, regardless of cost.

I like Dexter Russel quite a bit. I also use Old Hickory. You can buy Old Hickory at Ace for like five bucks and they last forever even with the abuse I give them.

I posted in that thread, I still stand by what I posted.

I get "you do not have permission to see that forum" error when I follow that link :( Anyway, I love the good Henkels (the knives with 2 guys on them) but hate their cheap knives (the aforementioned One Guy knives). the OP didn't include a price range, which matters here.

See here for ideas: Messermeister San Moritz Elite knives for over 14 years. I had them professionally sharpened when they were 11-12 years old. They still cut like new, but they're crazy expensive.

However, the best deal I know of is the Gunter Wilhelm forged sets if you get them at a Costco Road Show. I got their $79 10" meat slicer at a road show for $35. It is wicked sharp and has a better heft and balance than my Messermeisters. When Gunter Wilhelm comes to Costco, you can get a $700 set for around $279.

I've got a Shun and some Henkels. We do a pretty wide range of cooking and IMHO you can easily get by with a chef's knife. If you want to be extravagant, maybe a serrated bread knife (I bake bread, so I'm biased). My wife and I prefer the Shun, but both are fine.

Count me among those who vote for cast iron pots and pans. At least one enameled or something stainless for acidic stuff. We have a separate small non stick pan for eggs too.

A good Chinese chef's knife will take care of most everything other than jobs for a small knife or perhaps a serrated knife.
These are good'uns, heavy enough for light cleaver work, the blade is curved so you can rock the blade on a cutting board, the end of the handle serves as a pestle for crushing and grinding. the flat side opposite the blade works as a tenderizer, and you can scoop with the flat end. You can hone a razor edge on the carbon steel blade:

The Ontario Knife Company's "Old Hickory" brand is great stuff that will last a lifetime and is very affordable.
